Make delicious golden cornbread by making your own cornbread mix. It's the 7th Mix-up you can make from the goody mix.

“Did you make cornbread?”

When the family gathers for dinner and they see the crock pot filled with soup or chili, this is the first thing they ask.

The answer had better be a big ‘YES’!  Cornbread is a great comfort food around here.  We love it hot with melting butter and dripping with honey. YUM.

Today I present to you the 7th Mix-up; Cornbread.

It’s easy to toss together.  It requires just 4 things:  Goody Mix, flour, Cornmeal and brown sugar.  (Brown sugar is the secret to this delicious Mix-up.)

The Easy Golden Cornbread Recipe is so simple to make that if you skip the rest of this article and just click on the recipe link below, you can probably have it halfway to the oven before you could finish reading the whole thing….if that makes sense. 🙂

Gather your ingredients

My butter was cold, straight from the fridge, so I popped it, mix-up and all, in the microwave for about ten seconds and allowed it to get a bit melty.  This works well for a number of Baking Outside the Box Recipes.

Add all the other ingredients and stir it up to combine them well.  It’s OK and in fact a good thing if it’s a little lumpy.  If the batter is whipped too hard the cornbread will turn out dry and crumbly.

Place in prepared pan (I chose a pie plate today) and then pop it in a 400 degree oven for 15-18 minutes.

When you remove the Cornbread from the oven, allow it to cool for 5 minutes or so to make it easier to cut.

Serve it up warm with butter and honey.

(In the background you can see the cute ‘Butter Bell’ that my friend, Carmen, gave me.  I’ve really enjoyed using this little butter keeper.  It keeps the butter fresh, clean and at a usable temperature year round. –Besides it reminds me of Carmen every day.  I highly recommend  a butter bell. 

Cornbread Mix-up

The Cornbread Mix-up can be used identically to a store-purchased mix and generally costs less than half the price.
Prep Time 5 minutes
Total Time 5 minutes
Servings 8 cups Cornbread Mix-up

Ingredients
  

  • 3 cups Goody Mix
  • 1 1/4 cups flour
  • 3 cups yellow cornmeal
  • 3/4 cup brown sugar , packed

Instructions
 

  • In a large bowl, stir cornmeal and brown sugar together until there are no sugar-lumps and mixture is like fine sand.
  • Add flour and Goody Mix to cornmeal mixture, stirring to combine.
  • Pour Cornbread Mix into a large, gallon-sized, freezer bag or in a securely-lidded bowl or jar that will hold at least 8 cups. This will make 8 Cups Cornbread mix.

Notes

To insure there are no sugar lumps, you can sift the cornmeal and brown sugar together into mixing bowl.

Cook Time 15 minutes
Total Time 20 minutes
Servings 12 pieces

Ingredients
  

  • 2 1/4 cups Cornbread Mix-up
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup butter , softened or melted

Instructions
 

  • Preheat the oven to 400 degrees.
  • Prepare a 9” x 9” pan (or pie pan) with vegetable spray or shortening.
  • Stir all the ingredients together in a bowl until just mixed. (If it’s a little lumpy, that’s OK.)
  • Pour into prepared pan.
  • Bake for 15-18 minutes.
