Some things bare repeating and this jello popcorn does!  If you missed it last year, I shared this recipe when I made it up for a family reunion.

Unlike the usual jello popcorn recipe, it isn’t gooey at all.  It is crisp, sweet and flavorful.

Try drizzling white chocolate over it as it cools and then be prepared to share, ’cause it will probably never make it into a storage container.

It can be used for different holidays using different flavor and color combos, red and green  for Christmas, orange and purple for Halloween, pastels for Easter etc.

The original recipe is from the Jello Cookbook.   This version has less corn syrup and is lighter and crispier than the original recipe.

For the white popcorn you could use plain or you could use my  Best Kettle Corn Ever which is a ‘No Kettle Kettle Corn’ (and has almost no clean-up!)

Both the Kettle Corn and the Jello Popcorn require a little baking time, but it isn’t long enough to heat up the house. 🙂

Both of the recipes make up quite quickly and then can be left to cool on the counter until you are ready to bag it up.  (As long as there are not too many ‘lil snitchers’ in your home.)

Crispy Jello Popcorn Recipe

Crispy, crunchy and sweet, this is not your typical soggy jello popcorn recipe.

Ingredients
  

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 tablespoon corn syrup
  • 3 tablespoons water
  • Jello 3oz box ( 1/3 cup)
  • 2 bags microwave popcorn

Instructions
 

  • Preheat oven to 250 degrees. Prepare two 9 x 13 cake pans by lining with foil or baking parchment. Spray with vegetable spray.
  • Cover counter with parchment or wax paper
  • Pour popcorn into a large bowl removing old-maids.
  • In a medium saucepan, stir the ingredients together, over medium heat and bring to a boil.
  • Allow to boil constantly stirring it, for 3 minutes.
  • Drizzle Jello mixture onto the popcorn and gently stir it until the popcorn is evenly coated.
  • Pour the popcorn onto the prepared pans.
  • Bake for 20 mins., stirring twice during baking.
  • Remove from oven and allow it to cool in pans a few minutes then dump onto counter prepared with wax paper or baker’s parchment..
  • Cool completely and break into chunks. Store tightly covered.
