Tracy and I are very excited to be guests this coming Thursday, Friday and Saturday at the Comicon FanX  in Salt Lake City.  We will be doing a plethora of panels and events.  We will also be in the vendors area signing autographs at our sales booth # 2306.

I’m lucky because at this convention I will be sleeping in my own bed as we live in the Salt Lake valley.  But one of the troubles with travel and business trips in general is that meals get iffy and snacks tend to come in the form of salted pretzels or vending machine fare.  Yuck.

The Low Carb Barbecue Chicken Spread Recipe is a great grab n go for when you have to take a meal or snack with you.  It’s also great that it is delicious.  I know it’s one of my go-to’s for traveling.  I just pop it in an insulated bag with an ice pack and some cut up veggies.chicsprd_final

Ingredients
  

  • 8 oz light cream cheese
  • 2 cups cooked chopped chicken
  • ¼ cup barbecue sauce check the label for carb count
  • ¼ tsp onion powder
  • ¼ tsp salt
  • Paprika and parsley for garnish opt

Instructions
 

  • In a small mixing bowl, stir together chicken, cream cheese barbecue sauce, onion powder and salt, until thoroughly mixed.
  • Before serving, sprinkle barbecue chicken mixture with small pinches of paprika and parsley. Serve with raw cut up veggies, ie, celery, carrots, cucumber etc.
  • Refrigerate leftovers.

Notes

The amount of carbs in this recipe depends on the barbecue sauce you are using.
