Ingredients
2
Cups
grated cauliflower
2
T
. parmesan cheese
1
egg
1
tsp
. olive oil
Pinch salt
¼
tsp
Italian herbs
(opt)
½
cup
cheese
, grated (mozzarella or Colby jack or cheddar.)
Instructions
Heat oven to 400 degrees.
Important: If using frozen cauliflower, thaw and then squeeze lightly to drain a bit
of liquid from it before working with it.
Mix all the ingredients together in a medium mixing bowl.
Draw 4 six-inch circles on a piece of baking parchment and place pencil-side
down on a baking sheet. Or, alternatively, grease the baking sheet.
Measure four ½ cups pizza crust mixture mounds onto circles.
Gently pat into 6 inch circles about ¼ inch high.
Bake for 10-12, till firmed up.
Allow to cool for a few minutes and then using spatula, flip crusts over.
Decorate tops with pizza toppings like sauce, pepperoni, meats, veggies,
and cheeses. Just use your favorites.
Bake in oven until cheese is bubbling 10-15 minutes. Do not allow to scorch.
Let pizza cool slightly. Slice and enjoy.
1 six-inch crust equals about 2.5 grams of carbohydrates. Other carbs in pizza toppings are additional.
Notes
Baker's Secrets: Skip the Italian herbs when using as a tortilla replacement. Great base for a 'taco' salad.
