Keto Pizza Crust | Low Carb

Delicious and simple to make. Soothing for those longing for a little comfort food on a low carb or grain-free diet.

Ingredients

  • 2 Cups grated cauliflower
  • 2 T . parmesan cheese
  • 1 egg
  • 1 tsp . olive oil
  • Pinch salt
  • ¼ tsp Italian herbs (opt)
  • ½ cup cheese , grated (mozzarella or Colby jack or cheddar.)

Instructions

  • Heat oven to 400 degrees.
  • Important: If using frozen cauliflower, thaw and then squeeze lightly to drain a bit
  • of liquid from it before working with it.
  • Mix all the ingredients together in a medium mixing bowl.
  • Draw 4 six-inch circles on a piece of baking parchment and place pencil-side
  • down on a baking sheet. Or, alternatively, grease the baking sheet.
  • Measure four ½ cups pizza crust mixture mounds onto circles.
  • Gently pat into 6 inch circles about ¼ inch high.
  • Bake for 10-12, till firmed up.
  • Allow to cool for a few minutes and then using spatula, flip crusts over.
  • Decorate tops with pizza toppings like sauce, pepperoni, meats, veggies,
  • and cheeses. Just use your favorites.
  • Bake in oven until cheese is bubbling 10-15 minutes. Do not allow to scorch.
  • Let pizza cool slightly. Slice and enjoy.
  • 1 six-inch crust equals about 2.5 grams of carbohydrates. Other carbs in pizza toppings are additional.

Notes

Baker's Secrets: Skip the Italian herbs when using as a tortilla replacement. Great base for a 'taco' salad.
