Chocolate Cake for Breakfast Diet Recipe

Ingredients

Cake

  • 1 3/4 cup Goody Mix
  • 3/4 cup cocoa powder
  • 3 eggs
  • 3/4 cup plain Greek Yogurt
  • 1 tsp . vanilla extract
  • 1/2 cup butter , softened

Ganache

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup cream , fluid

Instructions

  • Preheat oven to 350.
  • Grease and flour a 9” round cake pan.
  • Pour cake ingredients into mixer bowl.
  • Mix on medium-low speed for 1 1/2- 2 minutes.
  • Pour and spread batter into prepared 9" round pan.
  • Bake 25-28 minutes. Cake will spring back to a light touch.
  • Allow cake to cool 30 minutes before turning out onto wire cooling rack. (top down) Place rack over a jelly roll pan, (with rim).
  • Make ganache (glaze): Place chips in small mixing bowl. In microwave, heat cream to almost boiling in a small micro-proof bowl 30 to 45 seconds on high and pour over chocolate chips, stir or whisk until smooth and all chips are melted.
  • Pour ganache gently and evenly over cake. Ganache will thicken as it cools, spread thinly around side of cake with a spatula. Very little should fall onto pan, if any.
  • Allow glaze to set for 20-30 minutes before cutting to serve.

Notes

Baker's Secrets:
Get cake out of pan easily: Cut a circle of parchment to match pan bottom. Spritz a tiny bit of baking spray on bottom of pan. place parchment circle in pan. Spray pan with baking spray and flour as usual. For chocolate cake, replace flour with cocoa for a beautiful richly colored cake exterior.
