Ingredients

  • Dry:
  • 1/2 cup old-fashioned oats -gluten free
  • 2 tsp coconut flour
  • 1/4 tsp baking powder
  • 2 T. Swerve sweetener or pourable Splenda
  • Wet:
  • 1/4 tsp vanilla extract
  • 1/2 cup almond milk unsweetened
  • 1 egg
  • Optional extras:
  • -1 1/2 T. peanut butter with 1 1/2 T extra dark chocolate chips.
  • - A pinch each of cinnamon and nutmeg.
  • - 1 T. chopped walnuts with 1 T. chopped dried fruit.

Instructions

  • Heat oven to 400 degrees.
  • Pour dry ingredients into a medium mixing bowl.
  • Add the wet ingredients and stir any optional extras, if desired.
  • Allow batter to rest and prepare muffin tins with muffin liners and vegetable spray.
  • Bake at 400 degrees for 15 minutes.

Notes

The nutrition facts are for the basic recipe without any optional extras. Of course the cinnamon and nutmeg do not add calories, if used.
