- 4 large Eggs
- 1/2 cup Low Fat Ricotta
- 1/2 cup Almond Meal/Flour
- 3 tablespoons Coconut Flour
- 1/4 tsp. Table Salt
- 1/2 tsp baking Soda
- 1 tablespoon Coconut oil warmed slightly
Put all ingredients except coconut oil in blender.
blend till froth, about 30 seconds.
Add warmed coconut oil and blend for 15-30 seconds more.
Pour mixture into waffle maker according to manufacturers instructions.
