Ingredients

  • 1/4 tsp. chopped garlic
  • 1 T. minced fresh ginger
  • 2 T. Rice Vinegar
  • 2 T. teriyaki sauce (Lawry's was used for low carb count)
  • 2 T. soy sauce
  • 1 tsp Glucomanan powder (cornstarch replacement)
  • 1 cup shredded carrots
  • 3 chopped green onions
  • 2 oz. roasted peanuts
  • 16 oz cooked boneless pork chops, chopped up about 4 chops
  • 2 tsp. olive oil
  • 8 butter lettuce leaves (romaine as a replacement)

Instructions

  • Warm chopped meat, garlic and ginger in in olive oil in large skillet.
  • In a small bowl stir together vinegar, teriyaki sauce, soy sauce and cornstarch.
  • Pour vinegar mixture over meat in pan and add the carrots and onions.
  • Stir and cook for about 3 minutes until meat is warmed through and mixture has thickened slightly. Serve immediately on washed, prepped lettuce leaves.

Notes

Glucomannan was used as it thickens in warm liquid well.  You can try using1/2 tsp. xanthan powder to replace the glucomannan, but it may not thicken while the dish is warm.
