Loaded Cauliflower Head Recipe — Low Carb

Ingredients

  • 1 medium head cauliflower
  • ¼ cup light miracle whip
  • 2 tsp. yellow mustard
  • 1/3 cup shredded Colby Jack cheese.
  • 2 slices cooked bacon crumbled

Instructions

  • Cook (steam) cauliflower in pan on stovetop for 10-15 mins.--Just until fork tender, but not soft.
  • Stir together mustard and Light Miracle Whip in a small bowl.
  • Place cauliflower in small, shallow, casserole or baking pan. (About 9”x 9”).
  • Spread mustard sauce over cauliflower and sprinkle with cheese.
  • Place in oven for 10 minutes or until cheese is bubbly and hot.
  • Remove from oven and sprinkle bacon over the top.
  • Serve immediately.

Notes

If you want to go even lower carb try replacing the Miracle whip with sour cream.
