Strawberry Fools Low Carb Candy

An easy and yummy low carb strawberry flavored candy adapted from my mom's old time recipe.

Ingredients

  • 1 Lg pkg sugar free strawberry gelatin serves 8
  • 1 cup granulated Splenda
  • 2 cups shredded unsweetened coconut
  • 1 cup pecan pieces
  • 3/4 cup plain nonfat Greek yogurt
  • ¼ cup heavy whipping cream
  • 1 tsp. vanilla

For Leaf Topper Decorations (opt)

  • 36 1 ½ ” squares of green paper
  • Round wooden toothpicks
  • A few drops green food coloring
  • Scissors
  • Or
  • Sprigs of mint leaves

Instructions

  • Grind pecan pieces in a nut grinder or blender till fine.
  • Mix dry ingredients; gelatin, Splenda, coconut, and ground pecan pieces in a large mixing bowl.
  • Mix wet ingredients; yogurt, cream and vanilla in a small bowl.
  • Stir wet ingredients into dry till thoroughly incorporated.
  • Form into 36 strawberry shapes.
  • Cover and place in refrigerator one hour to overnight.
  • Insert toothpick and decorative paper leaves, if desired.
  • Store in tightly covered in fridge.

Notes

For green toothpicks: place toothpicks on paper plated and drop a few drops of green food coloring on them. Roll them with a spoon back to cover in color. Place plate of picks in microwave. Microwave 15 seconds and stir with spoon. Repeat 15 seconds in microwave up to 1 minute, until toothpicks appear dry. Do not over dry or allow to burn! Remove to paper towel and air dry for 1 hour or overnight.
For leaf decoration toppers: Cut green paper squares into leaf toppers as pictured and pierce candy tops with toothpicks. Place on strawberries just before serving.
Or use mint sprigs and decorate candy tops just before serving.
