Ingredients

  • 2 cans Albacore Tuna 5.5 oz each
  • 5 baby carrots chopped
  • 1/4 cup petite peas frozen
  • 1 lg stalk celery chopped
  • 2 tbsp chopped onion chopped finely
  • 1 tsp Lemon pepper seasoning
  • 1 cup shredded Colbyjack cheese or shredded cheddar
  • 1 lg egg
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream

Instructions

  • Preheat oven to 350 degrees.
  • Prepare an oven-proof 9" x 9" pan or a 9" x 11" pan or small casserole bowl with a spritz of avocado oil.
  • Chop up onion, celery and carrots.
  • in a medium mixing bowl, stir together the tuna, mayonnaise, sour cream, egg, lemon pepper seasoning, chopped vegetables, peas and half of the cheese.
  • Pour mixture into prepared pan and sprinkle cheese over the top.
  • Bake for 30 minutes or until cheese is melted and mixture is is hot and bubbling.
  • Cut into 4 servings and serve while warm.

Notes

Before bakingĀ  garnish the casserole by sprinkling with 1/2 tsp. dried chopped parsley or 1 Tbl of chopped green onion.
