Easy Low Carb Slow Cooker Chili

This Easy Low Carb Chili Recipe can be adapted for those who'd like it spicy or mild as well as more or less carbs.

Ingredients

  • 1 1/2 lbs ground beef
  • 1 cup canned black beans drained and rinsed
  • 1 3/4 cups tomato sauce low or no sugar and salt
  • 14.5 oz diced tomatoes canned, do not drain
  • 1 cup onion chopped
  • 1 tsp salt
  • 2 tsp chili powder reduce amount by half for a milder chili
  • 1/4 tsp paprika
  • 1 clove chopped garlic
  • 1 tsp dried oregano
  • 1 pinch cayenned pepper (optional) It's super hot tasting
  • 2 tsp avocado oil
  • 1/2 cup water

Instructions

  • Drain and rinse beans. Place in Slow cooker
  • Chop and sauté onion in avocado oil over medium heat till onions are limp and golden. Place in Crock pot.
  • Cook and crumble ground beef over medium heat. Drain off oil if it's excessive. Place in Slow Cooker.
  • Pour tomato sauce and diced tomatoes over the beans, onion and meat.
  • Add salt, chili powder, paprika, garlic, oregano and cayenne (if using.)
  • Add 1/2 cup water and stir all ingredients gently to combine.
  • Set Slow Cooker to low for 5-8 hours. Or set on high for 3-4 hours on high for a shorter cooking time. Add more water toward end of cooking time if needed.

Notes

If you'd like the chili to be more like a Keto dish here are some ways you can cut down on those carbs:
If you cut out both the onions and the beans and add in another 8 0z meat and onion powder to taste, you will have a serving of chili that is 7.9 total carbs or 6.3 net carbs and 190 calories. It will also change the texture of the chili somewhat.
