These Chocolate dipped s'mores are surprisingly easy to assemble. No baking required. Perfect for a last minute Valentine.

These gorgeous Valentines are my version of Chocolate Dipped S’mores.  They are super easy and only require a microwave.  Yay!

Of course, because they are for Valentine’s I wanted my confections to be heart-shaped but I didn’t want to bake up my own graham crackers to achieve it.  I tried using a small cookie cutter on graham crackers and ended up with several broken hearts. 🙁 .

I finally hit upon the idea of spritzing them with a bit of water (3-4 sprays) and heating them for a few seconds (15 seconds) in the microwave.  This softened the crackers just enough to allow them to be cut up without crumbling.

A cookie cutter that is about 2 1/4″ across is about the right size to get two hearts out of a long graham cracker.

My next challenge was to cut the marshmallow (regular size– not jumbo) to fit the shape.  This is what I did:

1.Cut marshmallow in half lengthwise.

2. Cut one of the halves at an angle, corner to corner to make two triangles.

3. Cut last piece in half crosswise to make two half circles.  (And I should mention I used strawberry-flavored marshmallows just for fun.)

4.  The marshmallow pieces fit on the cracker like this.

Next I had to get the marshmallow to stick to the top and bottom crackers.  I tried just heating them a little in the microwave, but the marshmallow puffed up and then deflated, and although it stuck to the crackers the marshmallow became tough.  hmmmm….  Trying again, on a whim I spritzed the marshmallow with water and then placed it on a cracker open-faced in the microwave for 6 seconds, just until before the marshmallow puffed up.  Removing it, I then lightly added the top heart.  This worked and the crackers adhered to the marshmallow.

I allowed the cookies to cool a few minutes as I prepared about 1 cup of dipping chocolate and one at a time covered  six heart-shaped Chocolate Dipped S’mores.  I placed them on baking parchment and added a few sprinkles.

For fun, I found my smallest heart-shaped cookie cutter (1 1/2″) and cut several hearts that I dipped in melted pink candy wafers ala frosted animal crackers.  Oh yum.
