Easy to make Game day Guac. It's easy to whip up this fresh guacamole recipe and easy to gobble up. Keto approved, it's great with my Dorketos recipe and cut up veggies. Serve it with chips and cut-up fresh veggies.

This Fresh Guacamole Recipe is one of my  favorite avocado recipe. I grew up thinking that all green salads contained avocados. I adore them.

Avocados can get humongous if allowed to tree ripen.  When I was young I had a friend whose dad worked in an avocado orchard.  He used to bring home some of the most enormous avocados.

One of them was 8 pounds!  It was the size of a small watermelon.  But of course we never see them that way at the store.

My recipe is simple,  just 6  ingredients: Avocados, lemon, salt, garlic, salsa…hey, where’s ingredient #6?

guac 2

Ah, here it is shyly peeking out on the far left; plain Greek yogurt.  My Mom used sour cream, but I find Greek yogurt to be an excellent lighter ingredient swap.  No one in  the family has ever even noticed. If you are on a keto plan, you may wish to just use the sour cream. 😉

Then after peeling, pitting  and coarsely mashing the avocados, you simply stir up all the ingredients  in a bowl.  Of course this recipe is flexible.  Add or subtract as you like.

Add a pinch of Cayenne for some heat or use fresh chopped tomatoes instead of salsa to make it milder.  It’s up to you.   Lemon juice or bit of vinegar are essential to keeping the Guacamole from browning.

And that isn’t a little football in the  Guac, it’s the pit!  And that should also keep the guacamole from browning too.

But don’t be surprised if you find the kids using the pit as a ball later. 🙂  Of course the best way to keep it fresh is to promptly serve it with tortilla chips and cut-up veggies.   Just watch that bowl empty. Enjoy! – Laura

If you long for low carb chips to go with the guacamole, try my Dorketos recipe, here.
