This recipe for Grilled Zucchini Planks comes together quickly and makes for easy vegetable success on the grill. The variations (and yumminess) are endless.

You may have guessed by now that I love Zucchini squash.   The Grilled Zucchini Planks are a favorite way at my house to prepare zucchinis.  The first time I mentioned  this dish was almost a year ago.  I’ve experimented with it quite a bit since then.

It takes just a few minutes to prep the planks.  After washing, I slice the zucchini lengthwise on the thick slice setting on my mandolin slicer.  (You can get one here.)  The squash can also be sliced into planks with a sharp knife.  after that you brush the planks with vinegar and olive oil and then sprinkle with seasoning.  If you want to prepare them ahead of time, simply put olive oil and vinegar with planks in a sealed container or plastic bag and put it in the refrigerator for later.  (use within 2 days.)

Then you put them on the grill or in a grill pan. I usually pick the coolest place on the grill to put them so that they cook evenly while I am cooking the meat.  They are done when they are fork tender and hot, (but not squishy.) If they get done before the meat, I just top the serving plate with foil to keep the Grilled Zucchini Planks warm.

The seasoning I use depends on which type of meat I’m preparing or simply on my mood.  If I’m grilling beef (or sometimes chicken), I will use a ‘Montreal Seasoning’. (Get ‘Montreal Seasoning’ here.)  If I’m doing something with an Asian flair I will use ‘Simply Asia — Sweet Ginger Garlic Seasoning’. (Get ‘Simply Asia’, here.)  If I’m just grilling up Zucchini as the main dish I just use ‘Lawry’s Seasoning’. (Get ‘Lawry’s’ here)

I’ve been known to use whatever vinegar was in the fridge, But my favorite is Balsamic.  If I’m using the ‘Simply Asia’  I use Rice Wine Vinegar.  If I’m using Lawry’s, good ole’ cider vinegar is fine.

Ingredients
  

  • 2 medium zucchinis
  • 3/4 tsp Montreal seasoning or seasoning of your choice
  • 1 T. olive oil
  • 1 T. balsamic vinegar or vinegar of your choice.

Instructions
 

  • Wash and cut off both ends of zucchinis.
  • Slice zucchinis lengthwise into 1/4 inch thick planks
  • Spray vegetable oil onto grill pan*, if using.
  • Arrange planks on pan and sprinkle with olive oil, vinegar and Montreal seasoning.
  • Place pan on grill over medium to medium low heat and cook till hot and fork tender, turning over once. (Grill about 8-10 minutes.)
  • Remove from grill and serve at once.
  • *You can place zucchini directly on grill, if no pan is available. Watch closely so it doesn’t scorch.
