Adapting this Zero Carb Popsicle Recipe from my old ‘dripless’ Popsicles recipe was a pure delight.

It’s been hot; melt-on-the-sidewalk hot.   I wanted something  frosty and ‘childhood-cherry-flavored’.  of course, I could have bought a box of sugar-free frozen treats at the store, but then I’d have eat them. (I don’t necessarily like every flavor in the box.)

One of the greatest problems with sugar-free Popsicles is that often they have the texture of a flavored ice cube. Because of the gelatin in these they are a bit softer and like the original name implies, nearly drip free.

I love this recipe because it just works. It has just three ingredients.  (OK, four if you count the water. 🙂 )

For my first batch I chose to use cherry sugar-free Jello and a packet of Cherry Limeade Kool-Aid. It made 5 popsicles in molds I was using, which holds about 1/3 of a cup.  This means that they were about 8 calories each with no carbs.  Cool huh?

Yesterday I sent the grand-kids outside with their Popsicles and joined them with one of my own.  They kept asking why they couldn’t have one like mine despite the fact that theirs were a lot larger than mine.  It must have been the vibrant red color.

Zero Carb Popsicle Recipe

Ingredients
  

  • 1 pkg. sugar free Jello 4 serving size*
  • 1 pkg. unsweetened Kool-Aid*
  • 1/2 cup Splenda sweetener or other no-calorie choice.
  • 1/2 cup hot water
  • 1 1/3 cups cold water

Instructions
 

  • Using a mixing bowl you can pour from or a large glass measuring cup:
  • Stir the dry sugar free Jello, Kool-Aid and Splenda together in the bowl.
  • Heat 1/2 cup water to boiling and pour over dry mixture.
  • Gently stir mixture till dissolved and clear.
  • Stir in the cold water.
  • Pour into Popsicle molds.
  • Place in freezer until frozen about 2 hours.

Notes

The pictured Popsicle is made from Sugar Free Cherry Jello and Cherry Limeade Unsweetened Kool-Aid. Pick whatever flavors you want that are complimentary.

    Do you think this would work the same using a packet of Crystal Light instead of the Kool-aid and Splenda?.. I always have Crystal light on hand but not kool-aid..

      As long as the crystal light makes 2 quarts, it will probably work.

    I’m so happy I found this. I’m on the keto diet and had to have surgery in which I have to prep for. Clear liquids, jello, broth, etc. I was trying to find something of “substance” other than standard jello. These turned out amazing and really helped. Thank you SO much for this recipe.

      Yes, you’re correct. This is the kind that comes in a bag, not the packets.

    The recipe is good, (if a bit tart for me), but I have yet to have the popsicles freeze solid. They are VERY soft. Barely keep their shape. Freezer is set for 0ºF, so it isn’t the freezer.

      Thank you for your comment. I’m not certain what could be causing the soft texture as I make the popsicles as per the recipe. Oddly, I find the gelatin keeps its shape even after the icy part has melted. Perhaps using a different sweetener would help? If you discover something that works for you please let me know.

    Can I not use the sweetener at all? Jello and koolaid are already so sweet to me. I tend to make double the amount of koolaid to make it less sweet. Lol. Thank you. It sounds wonderful.
