Meringue Cookie Kisses

Light as air cookie kisses. Crispy on the outside, lightly chewy on the inside.

Ingredients

  • 3 egg whites
  • ¼ tsp . cream of tartar
  • ¼ cup Jello powder ** See Baker’s Secrets below.
  • 1/8 tsp . salt
  • 3/4 cup Sugar
  • 3-4 drops food coloring (opt)
  • 1 ½ tsp . lemon juice (opt – adds a bit of tartness)
  • Sprinkles or nonpareils (opt)

Instructions

  • Prepare a baking sheet(s) with baker’s parchment.
  • Preheat oven to 250 degrees
  • In a small bowl stir together Jello powder, salt and sugar
  • Beat egg whites with cream of tartar until foamy and cream of tartar is disolved.
  • While mixing, slowly and evenly pour Jello mixture into egg whites.
  • Continue beating and add in food color, if using.
  • Beat the egg mixture until it is stiff and glossy and stands in peaks. It will take 3-5 minutes total mixing time.
  • Add in the lemon juice and allow it to mix in on low till just combined or stir in gently with spatula.
  • Transfer batter to piping bag with a jumbo tip.
  • On the prepared pan pipe kisses onto parchment paper about 1 inch apart. (Cookies puff up a bit.
  • Sprinkle with nonpareils or sugar sprinkles.
  • Place pan in oven and bake meringues at 250 degrees for 20 minutes. Turn oven off the oven and allow them to sit in oven for 25 minutes. Cookies will not brown.
  • Remove from oven and allow cookies to cool for about 5 minutes and then transfer to wire rack to dry completely. Makes 36
  • Cookies should be puffy and crispy on the outside and a bit chewy inside.
  • Store in an airtight container to retain crispness.
  • For Leprechaun Kisses: Make green meringues and cut squares of foil to wrap cookies like candy kisses. Twist an Irish phrase strip into top of each kiss. (Download phrases at https://bakingoutsidethebox.com . )

Notes

(**Baker’s Secrets: Use any flavor gelatin you like. I used Jolly Rancher Green Apple. If you want to make it your own flavor, use a ½ packet of unflavored gelatin and increase sugar to 1 cup. Omit lemon juice. Then simply add in several drops of flavoring like peppermint or vanilla, to taste
