Low Carb Cucumber Sushi Towers

Low carb and luscious Cucumber Sushi Towers are simple and impressive. No time to make the towers? Slice up the cucumber and use the sushi mixture as a dip.

Ingredients

  • Sushi Mix:
  • 3 cups cauliflower rice
  • 6 oz crab or salmon
  • 2 tsps rice wine vinegar
  • 1/4 tsp. salt
  • 1/2 tsp Asian seasoning
  • 2 T. cream cheese
  • 1 T. toasted sesame seeds
  • 2 T crushed pork rinds opt
  • 2 long cucumbers
  • Avocado sticks or cubes

Instructions

  • In a cheese cloth or strong paper towel, gently squeeze liquid from cauliflower rice.
  • In a small mixing bowl stir together, cauliflower rice, fish, cream cheese, vinegar, salt and Asian seasoning. Set aside.
  • To make cucumber towers: Cut cucumber into 2" long sections and scoop out inner flesh almost to bottom. (If using cucumber slices, serve crab mix as a dip and avocado chunks on the side.)
  • Stuff towers with avocado sticks or chunks and sushi mixture.
  • Garnish with toasted sesame seeds and crushed pork rinds.
  • Serving suggestion: Serve with soy sauce, wasabi and pickled ginger.
