Ingredients
Sushi Mix:
3cupscauliflower rice
6ozcrab or salmon
2tspsrice wine vinegar
1/4tsp.salt
1/2tspAsian seasoning
2T.cream cheese
1T.toasted sesame seeds
2Tcrushed pork rindsopt
2long cucumbers
Avocado sticks or cubes
Instructions
In a cheese cloth or strong paper towel, gently squeeze liquid from cauliflower rice.
In a small mixing bowl stir together, cauliflower rice, fish, cream cheese, vinegar, salt and Asian seasoning. Set aside.
To make cucumber towers: Cut cucumber into 2" long sections and scoop out inner flesh almost to bottom. (If using cucumber slices, serve crab mix as a dip and avocado chunks on the side.)
Stuff towers with avocado sticks or chunks and sushi mixture.
Garnish with toasted sesame seeds and crushed pork rinds.
Serving suggestion: Serve with soy sauce, wasabi and pickled ginger.
