Spray cookie sheet with vegetable spray or cover with baking parchment.
In large bowl, combine first 4 ingredients and mix well.
Stir in raisins and walnuts, if using, till well distributed throughout dough.
Drop onto prepared cookie sheets using a small cookie scoop or by rounded tablespoonful, about 2 inches apart.
Bake 10-12 minutes till light golden brown.
Cool briefly on cookie sheets before placing on a wire rack.
Notes
If dough is too stiff add up to 1 T. water a few drops at a time.
Change it up: Add a 1/3 cup coarsely chopped walnut to batter or replace raisins with dried cherries or chocolate-coated candies.
